Cider Cake





Ingredients:

  • 125g butter
  • 125g of sugar
  • 2 eggs
  • 250g flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • a bit of cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon gingerbread spice
  • 200ml Cider

Mix butter with sugar until fluffy. Add the eggs. In the other bowl mix flour with baking powder and spices and half of it add to butter mix. Combine thoroughly. Add the Cider and mix again. Add the rest of the flour mix and combine it thoroughly once again. Bake at 180C for 35-40 minutes.




Pancakes with Cheese





Ingredients for the pancakes  batter:

  • 300ml sparkling water
  • 1 egg
  • 80g sugar
  • about 250g plain flour

... To make dark version of the pancakes add:

  • 6 tablespoons cocoa

Combine all ingredients with each other. Pour portions of batter on lightly greased hot skillet and fry it on one side until you see that the surface is no longer sticky. Then flip them over and fry about another 30 seconds.




Ingredients for the vanilla cream cheese fiiling:

  • 200g creamy cottage cheese
  • 2 tablespoons sugar
  • 3 tablespoons vanilla sugar house
  • 2 tablespoons of thick double cream

Mix everything and fill fried pancakes with such filling. Then, arrange them in a greased baking dish and bake at 190C for about 15 minutes.


Anise and Apple Muffins





Ingredients for 12 muffins:

  • 2 cup plain flour
  • 1 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground anise
  • 3/4 cup sugar
  • 1 egg
  • 12 apple slices
  • 12 anise stars

All the ingredients except apples and anise stars combine together with each other. Then fill up the muffins baking tin to 3/4 height. Bake at 180C for about 15 minutes, then remove tin from the oven and stick apple pieces with anise stars quickly into the muffins. Re-insert into the oven and bake for another about 10 minutes to dry stick.
