Double Chocolate Muffins with Plums





One plum ... Second plum ... Third plum ... And after losing calculations I found that I can`t in this plum`s season eat plain plums only. That`s why I decided to bake muffins with it. And because I like variety, so without thinking I took a long time for the preparation of chocolate muffins with plums. Finally, I like chocolate too:)


I must say that these muffins were the best I have ever done. I'm sure it's due to replace the cocoa with melted chocolate... mmm ~ _ ~ Now, cocoa landed at the bottom of the cabinet and wait for my favor. Coming back to the plums, then the particles are embedded in these wonderfully fluffy muffinach break the taste of chocolate sweets, its sour aftertaste. Yum! 




Ingredients for 12 muffins:

  • 2 cups of plainflour
  • 3 / 4 cup of caster sugar
  • 1 teaspoon of baking powder
  • 1 / 2 teaspoon of baking soda
  • 1 egg
  • 80g of melted butter
  • 1 bar of melted dark chocolate
  • 2 tablespoons of rum
  • 16 chopped prunes
  • 3 / 4 dark chocolate finely chopped

All the ingredients combine together with a spoon on a uniform mass. Try to do it efficiently. Apply ready-made dough for the muffin molds and bake at 180C for about 20min.




Ingredients for cream:

  • 200g of cream 36%
  • 3 tablespoons of powdered sugar

Briefly whisk the cream with powdered sugar, then put it to the refrigerator for 20 minutes.
When the muffins cooled pipe on top some chilled cream.


To decorate:

  • 12 quarters of plums

Quartiles stack on top of the cream lightly pressing.




Suggestions: The cream is best applied on muffins just before serving. Instead of chocolate you can add 4 tablespoons of cocoa.


Question: How do I get the filling in muffins and cakes (ie, pieces of chocolate, fruit) won`t sank to the bottom during baking?
Answer: Before you add these ingredients to the dough spring it with flour.


Question: In what kind of conditions properly store chocolate?
Answer: The ideal temperature for chocolate is 18C. You should not expose it to sunlight, too low or too high temperatures. If you absolutely have to insert it into the fridge it is best also put it in a zipper bag or container adapted to store food, which will prevent the passage of odors, mixing them, and excessive moisture.
