Fish Pie and Leek Salad





This was my first approach to this dish. I know that did not last. Fish pie came out great. It is made very issue, so even busy ones will be satisfied. It should be noted, however that this fish casserole is not so daily. In my opinion, would also work perfectly in the role of dish for romantic dinner or an elegant meeting among friends. Of course with addition of wine. I must admit that I liked tremendously its universality.




Ingredients for 6-8 servings:

  • 3 white fish fillets
  • 100ml of dry white wine
  • 1.5 cups of milk
  • 1 tablespoon of butter
  • 10 large potatoes
  • 80g of butter
  • 2 tablespoons of thick sour cream
  • salt
  • pepper
  • 2 large onions
  • 15 green olives
  • 200g of feta cheese
  • paprika chilli powder
  • Herbes de Provence

Wash and dry the fillets with paper towels. Shower it with white wine and leave to its sinking in about 10-15 minutes. After this time lay fillets down on a pan, pour hot milk with butter on it and boil for ​​about 15 minutes. Remove fillets from a pan to the greased casserole dish and divide it into smaller pieces. Mash cooked potatoes, add to it butter, cream, salt and pepper. Add fried in a pan add finely chopped onion to potato puree mix it together. Lay it off the fish, add diced feta into pieces and cut into slices olives. Cover the fish with mashed potatoes with feta cheese, sprinkle with paprika and top with herbs. Bake at 220C for 20-30 minutes.




Ingredients for leek salad:

  • 1 leek
  • 150g of canned green peas
  • salt
  • pepper
  • 4 tablespoons of mayonnaise
  • 2 eggs

Wash, dry and cut into thin slices leek. Pour the peas. Add salt and pepper in amounts corresponding to your preferences pouring into mayonnaise and mix thoroughly. Now add the mayonnaise to the leek and peas. Stir again. Cook hard-boiled eggs, cut into quarters and add to rest.




Suggestions: Even delicate béchamel sauce or a thick tomato sauce, full of aromatic herbs and garlic will be great on top of the fish pie. You can also add some grated cheese. Add it for the last 5-10 minutes of baking, because otherwise it will burn! Milk from the fish do not necessarily have shed.You can add it to the puree instead of cream. Store it in the fridge. The next day casserole has no problem holding the form, because liquids are absorbed evenly. If you prefer a light version of the salad instead of mayonnaise add plain yogurt, sour cream or any of those ingredients, mix half and half with it and likewise with the unfortunate mayonnaise.

Answer: Before baking sprinkle it a little lemon juice or dry white wine.


Question: How do I get skinny fish was not too dry after baking?
Answer: Put on it some butter for the baking time or drizzle with olive oil.
