Onion Soup




Onion soup comes from France and when I tried it once, I did it three times in a row :) You can drink it during day instead of hot tea or eat with a warm toast with a slice of cheese during lunchtime. See? It`s the ideal position for winter dinners!





Ingredients for about 1l soup:

  • 5 large onions
  • 1 tablespoon butter
  • 700ml vegetable stock
  • 200ml white wine
  • pinch of sea salt
  • black pepper

Blend onions for small cubes. Fry it in the butter, add to broth with wine and spices and cook for about 15 minutes.





Top:

  • slices of baguette
  • slices of cheese
  • Herbes de Provence

For each serving of soup poured into casserole dish place the bread with cheese and herbs on its surface. Bake at 180C for about 2-3 minutes.





Suggestions: You can also use Roquefort cheese .


Version light: Skip the addition of bread and cheese.



Question: I do not have casserole dishes for soups. How else can I bake cheese on toast arranged on the surface of soup?
Answer: Pour hot soup on a plate or a bowl, place bread, cheese and herbs on it. Cover with another plate or bowl for a few minutes and after a while served :)
