Sunny Cookies with Meringue






These sunny cookies are our family tradition during each family gatherings. They are sooo delicious with crispy base, fluffy frosting inside and delicate meringue on top. Cookies are also sprinkled with some coconut flakes for a lighter effect!





Ingredients for a cookie:
  • 400 g plain flour
  • 250 g butter
  • 2 egg yolk
  • 2 tablespoons sour cream
Mix all ingredients together. Roll the dough out on floured surface on 3mm thick. Then cut into shapes using for example shot glass.


Ingredients for meringue:
  • 2 egg yolk
  • 200g caster sugar
Beat the egg yolk and sugar until thick and has a light colour, than spread it all over dough rings. Bake in the oven at 180C for 10-15 minutes. 


Ingredients for frosting:
  • 2 eggs
  • 100 g sugar
  • 200g butter
  • 30ml alcohol

Whisk egg under the steam with sugar until thick and their consistency will resemble pudding. When ready, set them aside to cool and when it will cooled whisk them with butter, pouring slowly at the end a small stream of alcohol and beating it on the highest speed for several minutes.


When cookies have cooled down, spread the frosting over them and cover with another cookie. Spread the frosting also on the sides of cookies. 

For decorate cookies:
  • 1/2 cup coconut flakes
Finally roll the cookies in coconut flakes. 



Suggestions: If the egg frosting is too thin, put it for a few hours into the fridge and decorated cookies also store in the fridge. 


Version light: Use a thick plain yogurt for the cookies dough instead cream. Egg frosting can be substitute by mascarpone cheese.


Question: How quickly can I softened butter?
Answer: In winter put it for a few minutes on a warm radiator and in summer in a bowl over simmering water.
