These muffins are the most chocolately muffins ever! I`ve never eaten such a moist and rich chocolate muffins in my whole life so now that`s my muffin`s no.1 :)
Ingredients for 12 muffins:
- 250g flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 170g of sugar
- 4 tablespoons of demerara sugar
- 6 tablespoons cocoa
- 200g milk chocolate
- 250ml milk
- 80g butter
- 1 egg
Topping:
- 100g milk chocolate
- 12 meringues
Brush the top of baked and cooled muffins with melted in a water bath chocolate. Then stick meringues to it and allow it to solidify the chocolate (several minutes).
Suggestions: For the batter you can add any favorite flavor, extract or other additive highlighting the taste of chocolate, such as chilli. You can also use any kind of chocolate.
Version light: Use dark chocolate with high cocoa content, eg. 70% or more. Skip addition of chocolate on top and meringues.
